Cucumbers make an ideal base for a vibrant green smoothie. They are mild in flavor and therefore work well with other healthy components. It’s easy to get a nutritional boost with this refreshing cucumber smoothie.
Cucumbers naturally have a high water content, so I knew this smoothie would be hydrating. What I did not know were the numerous health benefits that cucumbers could also provide. Cucumber juice is abundant in vitamin K, which is essential for blood clotting. The vitamin activates the proteins necessary to thicken the blood. Vitamin K also contributes to building strong bones and kidney health.
Speaking of strong bones, cucumbers also provide calcium. And copper, which I did not even know the body needed. Copper improves brain health by making neurotransmitters, which your brain cells use to communicate. It helps to energize you, protects you from cell damage, and produces red blood cells. I am glad that I have learned more about this essential mineral, and now know a good source of it as well.
A crisp apple is also blended into the smoothie with the cucumber. Apples provide quite a lot of soluble fiber, and their skin contains important antioxidants. They contain certain cancer-fighting flavonoids and may even reduce the risk of developing Alzheimer’s disease. Also, the presence of bioflavonoids in apples lessens the affects of asthma.
Spinach is the final main ingredient in the smoothie. As a superfood, spinach provides a wealth of nutrients. Iron, potassium, folic acid, magnesium, and vitamins K and A are all offered in spinach leaves. When eaten raw it is also high in vitamin C. This smoothie has fruits, and vegetables, and minerals, and vitamins, and even tastes delicious. Leave some of the cucumber skin on so that you can benefit from all it has to offer. It’s not only great for staying hydrated on a hot day, but now you know that there is a good reason to eat cucumbers all year.
1 large cucumber, peeled halfway
1 cup fresh spinach
1/2 green apple, cored
1/2-inch piece fresh ginger, grated
Dash of lime juice, optional
1 tbsp honey
1 cup cold water
1. In a powerful blender, combine ingredients and blend until smooth. Add more cold water if necessary to reach desired consistency. Serve immediately.
